For a lawn, six to eight inches below grade is generally enough to get sod or seed established. If you are planting another tree in the same spot, or pouring a slab, or setting a fence post, it needs to go deeper and the major roots need to come out as well. Tell whoever is quoting what you intend to do with the space, because the depth is the price and grinding deeper than you need is money you did not have to spend.
